Skills for a Greener Future

The hospitality sector urgently needs green and digital skills to implement sustainability practices—from reducing waste to energy efficiency and circular operations.

🔍 Evidence-based insights:

  • The hospitality industry generates around 1.3 billion tonnes of global food waste annually, with a significant share from hotels and restaurants
  • Within the hotel sector alone, an estimated 79,000 tonnes of food waste are produced annually—nearly 10% of commercial food waste
  • Travelers are increasingly impactful: about 75% of consumers say they intend to choose more sustainable accommodations in the year ahead

• Staff need practical skills to monitor and reduce consumption—like food waste tracking and portion control.
• Digital tools—such as AI-driven waste analysis—help kitchens make smarter procurement decisions, reducing waste by up to 76% Business Insider.
• Green training builds competence in circular practices across energy, water, waste, and guest engagement.
• The skills gap affects operational costs, reputation, and adaptability to emerging environmental standards.

Through the Eco Smart Hospitality project, we implement a circular-hospitality curriculum, digital tools, and real‑world pilot training with learners, VET centres, and employers—working together with partners to build practical green and digital skills across Europe.
